I made these veggie tacos for the first time last summer and they were an instant hit! They’re light, flavorful, and best of all, they’re 21 Day Fix approved!
1 pkg of 6-in corn tortillas
1 medium onion, sliced
1 carton mushrooms, quartered
2 medium zucchini, sliced
3 cloves minced garlic
2-3 big handfuls of fresh spinach
olive oil, salt, pepper
Heat large skillet over medium heat and add 1 Tbsp olive oil. Add sliced onions and saute for a few minutes. Add zucchini and mushrooms and cook until tender. Add minced garlic and fresh spinach and cook until spinach has wilted. Season with salt and pepper to taste. Spoon veggie mixture into warm corn tortillas and top with avocado and fresh salsa.
Notes: This recipe makes enough for 8-12 tacos depending on how much filling you add to each tortilla. I added about 1/2 cup per taco.
