This Chicken Stir Fry is quick and easy to prepare and is a fabulous way to work your green and red containers into your 21 Day Fix approved eating plan.
1 Tbsp olive oil
1 lb boneless, skinless chicken breasts sliced in thin strips
1 -2 16 oz bags frozen stir-fry veggies
I only had one bag in my freezer so I added extra veggies I had on hand (I used about a dozen fresh asparagus spears and 2 yellow squash, sliced and quartered)
salt and pepper to taste (lemon pepper would be great!)
Put rice on to cook. Heat oil in large skillet over medium heat and add sliced chicken. Cook 10-15 minutes until no longer pink. Add veggies and cook until heated through (or until they reach desired doneness). Season with salt and pepper. Serve over hot, cooked rice. Add soy sauce to taste.

1 yellow (rice)
1 green (veggies)
1 red (for chicken)
*I was out of yellow containers on the night I made this for dinner so I just ate the stir-fry without rice and it was delicious and filling!
